Tomato & Mint Quinoa Salad

Step by Step Guide


2.5 Cups of Water

1.25 Cups of Quinoa

.75 Cup of raisins

1 pinch of salt

1 dozen cherry tomatoes halved

1 medium onion minced

10 radishes quartered

2 small cucumbers diced

.25 cup of fresh chopped mint

2 tablespoons fresh chopped parsley

1 teaspoon ground cumin

.25 cup of lime juice

2 tablespoons sesame oil

Salt to taste


Prep Approx. 40 mins – Cook 15 mins – Ready in 2 Hrs


Bring water to boil in a small saucepan. Add in the quinoa, raisins and a pinch of salt. Cover and let it simmer for 12 to 15 minutes. Remove from heat and allow it to cool to room temperature.


From your Nutritower gather tomatoes, mint, cucumbers and parsley. Cut the tomatoes in half, dice the cucumbers and finely chop the mint and parsley. Toss it all together with the minced onion, quartered radishes and raisins. Stir in the cooled quinoa, cumin, lime juice, sesame oil and a bit more salt to taste. Chill for 1 to 2 hours before serving.
